August is the month of the Restaurant Ikarus’ Executive Chef. This year, Roland Trettl and his team welcome two fellow Austrians to their kitchen.
First chef: Styria-born chef conquers Vienna
Heinz Reitbauer jun. was born in 1970 at the time when his parents were creating one of the largest gastronomic institutions in the land – the Steirereck in Vienna. However, he didn’t learn his craft in the family restaurant, as you would expect, but rather at the Gebrüder Obauer in Werfen, the large Alain Chapel in Lyon and the Restaurant Mosimann in London. Back in his homeland, he made the Steirereck and Pogusch in Styria his culinary playground. A decade later, he swapped this for the Steirereck in the City Park at the heart of Vienna. The top chef obtains his fish from local waters and uses regional and home-grown produce. Pickerel, custard apples, char liver and fruits from the Schönbrunn orangery are just some of the products on Heinz Reitbauer’s menu. The use of these Austrian delicacies has certainly gained him critical acclaim, as reflected by the Steirereck’s 4 "Gault Millau" toques, 5 stars in the ‘à la carte’ guide and ‘highest valued restaurant in Austria’ title as well as 2 stars in the current "Michelin Guide" for Austria.
Second chef: an aspiring son-in-law
Thomas Dorfer has not only taken on the position of head chef at the Landhaus Bacher in Mautern, Lower Austria; he has also become a son-in-law. But before winning over his guests at his gourmet temple in Wachau, he trained at the Hotel Alte Post in Bad Kleinkirchheim. His next placements were at the Restaurant "Kaiserstub´n" in Sydney, the Landhaus Bacher (surely bringing a great deal of enthusiasm to those involved), the Restaurant Jöhris Talvo in St. Moritz and various internships including working under the exceptional chef Joachim Wissler at the Restaurant Vendôme. Many people associate the Black Forest with the highly successful German TV series ‘Die Schwarzwaldklinik’. But for a top chef like Dorfer, the area evokes much more tender memories! From 1999 to 2002, he worked here as a Sous-chef under Claus Peter Lumpp, who now spoils his guests at the 3-star Restaurant Bareiss in the Black Forest. But back to the present - Thomas Dorfer now works at the Landhaus Bacher, serving up dishes such as boiled beef ravioli with a horseradish bread sauce or coconut ice-cream with curry. There can only be one title for such culinary debauchery: Chef of the year 2009, awarded by "Gault Millau". What better way to follow in the footsteps of his mother-in-law, Lisl Wagner-Bacher, the grand-dame of Austrian haute cuisine.
