A legend with a vision: Eckart Witzigmann
Germany's first three Michelin-starred chef. Chef of the century. Professeur de Cuisine. Eckart Witzigmann has garnered more titles and awards than almost any other chef and pioneered French nouvelle cuisine in the German-speaking area. Who else, if not the man from Bad Gastein, should be father to the greatest vision in international cuisine – realisation of the guest chef concept?
The Austrian learnt his craft at numerous establishments throughout Europe. He acquired experience in first-class foreign restaurants for 13 years, being particularly inspired by Paul Bocuse in Lyons and the Haeberlin brothers in Alsace. Witzigmann's time, from 1971, at the legendary Munich restaurant Tantris was epoch making. The restaurant was awarded its first Michelin star in 1973 and the second in 1974.
The Aubergine, Witzigmann's first restaurant of his own, followed in 1978. One year after it opened Eckart Witzigmann was awarded three Michelin stars – the first German-speaking chef and only the second chef outside of France to receive this accolade.
Witzigmann displayed great finesse when recommending Roland Trettl as Executive Chef for Restaurant Ikarus's kitchen – a central role in the entire guest chef concept. Ultimately the chef must not only bring excellent technical abilities to the table and be an unconditional team player, but also display great resilience for the 80 to 120 days a year that Trettl spends travelling to visit future guest chefs.
Restaurant Ikarus has become a byword throughout the culinary world – yet another award that Eckart Witzigmann can now add to his name.

Opening Hours Restaurant Ikarus
Daily, lunch 12:00 to 02:00 pm,
dinner 07:00 pm to 10:00 pm
In order to better facilitate the Ikarus kitchen's transition from one guest chef to the next, the restaurant will be closed for lunch the first day of every month.
However, evening opening hours on these days will remain the same: the restaurant will open at 07:00 pm.
