"The Ikarus is like competitive sport – it's addictive."
Jörg Bruch, Head Chef at Restaurant Ikarus, is one of the cornerstones of Roland Trettl's team and an almost permanent fixture of this modern concept: Bruch has been working in Hangar-7's underground kitchen since 2004.
After training as a chef in his home town of Bad Dürrheim, Bruch went on the world tour that is essential for top chefs. His posts covered Switzerland, London, Vienna and Spain, amongst others, before he arrived at Restaurant Ikarus. When asked about the difference to his previous employers, Bruch has to laugh: "In a normal top restaurant the menu changes perhaps three or four times a year. In spring you already know what the changes will be for the autumn menu. Here it changes every month!"
Stress is just one factor that is alleviated by being part of a great team, and above all, by the experience newly acquired from collaborating with top guest chefs. "You're working with Grant Achatz, who uses completely new techniques, with the Brazilian Alex Atala, who brought products with him that I only knew from descriptions, or the Australian David Thompson, who has taken authentic Thai cuisine to a world-class level. Here you get to know more chefs in a year than would normally be possible in the whole of one's career."
Jörg Bruch is most fascinated, though, by the effort that goes into every day at Restaurant Ikarus. "The standard and professionalism here are impressive, but above all the consistency with which both are maintained is phenomenal. Every day at Ikarus is like a competitive sport, you can't allow yourself any weaklings, you need a dedicated team. It's addictive." It's an addiction that is cheerfully acknowledged, especially by restaurant guests, many of whom have become regulars.

Opening Hours Restaurant Ikarus
Daily, lunch 12:00 to 02:00 pm,
dinner 07:00 pm to 10:00 pm
In order to better facilitate the Ikarus kitchen's transition from one guest chef to the next, the restaurant will be closed for lunch the first day of every month.
However, evening opening hours on these days will remain the same: the restaurant will open at 07:00 pm.
