The trailer on "njam!" TV for Peter Goossens "Meesterlijke Klassiekers!" shows the star chef in his element: tasting his own culinary creation, he is left shaking his head, speechless with emotion. And when he then says his famous "Top!", the audience is rapturous.
Peter Goossens enjoys cult status in Belgium. His three Michelin stars and 19.5 Gault Millau points are the reason why Peter has three of his own TV programmes.
The fact that he is now also developing his own cooking channel "njam!" speaks volumes for his business acumen. Those who know the story behind his "Hof Van Cleve" restaurant will have noticed that there’s a portion of obstinacy to Peter Goossens. I have rarely seen a restaurant that has been so uncompromisingly located in the middle of nowhere – a farmer's cottage amidst fallow pastures and corn fields.
But that's not all: Peter bought the cottage from a chef who himself opened a new restaurant just three or four acres away and who demanded written assurance from Goossens that he would only offer traditional cuisine over the next five years, not fine dining. Thus, steak, chips and béarnaise sauce would be on the menu rather than gourmet cuisine. Goossens agreed. After all, he was desperate to move to this farm house surrounded by grasslands. Yes, Peter Goossens definitely knows how to get what he wants. And when he does something, he does it properly. If he launches a website of his own, it will have ten thousand clicks a month. If he writes a cook book, he will write it with his world famous colleague Sergio Herman. And if he's relaxing, he'll do so completely: in the morning twilight, on a raised hide. Peter is a passionate hunter. Peter's food requires full concentration. Items that may at first appear to have been placed on the plate randomly have in actual fact been arranged in a strict and precise way, as can be seen in the case of his totally sensational langoustines with foie gras, beetroot and oxtail. The foie gras cream alone lends the whole dish a magnificent texture. Add to this the roasted langoustines, the oxtail, and the beetroot with its perfect tartness, and we experience the fine art of combining at its very best. Each time I look at Peter's plate, I come to the same conclusion: regardless of how many arrangements can be seen on it, there isn't a single detail that hasn't been elaborately thought out.
Of course, exquisite taste can also be achieved – to a much lesser extent – with just a few products. But if someone juggles with 13 balls instead of three, that usually impresses me more – provided that none of the balls are dropped! The fact that this master juggler is taking the time to visit Hangar-7, despite his heavy schedule, bears enormous testament to our Guest Chef concept.
And every guest can rest assured: you'll be left shaking your head, speechless with emotion. And let's see if you can then say "Top!" just as well as Peter.
