The Culinary Highflyers 2010  is a kind of anniversary edition. Even if the cookery books have not reached a milestone birthday, their home, Hangar-7, is celebrating its seventh birthday this year. A magical number and a good enough reason for this issue to depart from the well-trodden path.

The chef, the kitchen and the recipes. An unusual number of recipes. That is what awaits readers of this year's look back on the culinary year at Restaurant Ikarus. In 2010 a total of 13 top chefs from all over the world visited Hangar-7 and their one-month guest appearances provided guests in Salzburg with a unique culinary journey around the globe. In August the team at Ikarus surrounding Executive Chef Roland Trettl and Headchef Martin Klein was supplemented by the ideas and creations of two chefs.

Once again, this year the breadth of cooking styles and techniques extended from top traditional, classical cuisine, to avant-garde molecular cooking. The 2010 vintage is dotted with first-class delicacies though – the Roca brothers from Girona, Sergio Herman from the Netherlands, Grant Achatz from Chicago and Heinz Reitbauer from Vienna. Together they have enough stars, toques, points and top rankings in gourmet guides, if one were to list them all, to fill a separate booklet.

There are five or more recipes from every chef for you to read and cook. The content of "Culinary Highflyers 2010" is supplemented by background reports on the cookery stars and their restaurants. Hungry readers are served up a special titbit in the form of a very frank discussion in which senior members from the Restaurant Ikarus service and kitchen teams discuss the essential differences between waiters and chefs, why juniors overestimate their abilities and last, but not least, why caipirinha tastes much better with sukiyaki than wine.

This year's edition of the cookery book is a work of art in another respect – the entire contents are available as an iPad application called "Ikarus – Kulinarische Überflieger", or "Ikarus – Culinary Highflyers", in which, using the additional functions, the reader can become a chef. Want to put together a menu, combine dishes from vastly different chefs? All you need is a movement or two on the touch-screen and you can even print out your customised combination in the form of a menu!

Cooking like you've never cooked before

At the 2010 Frankfurt Book Fair at the beginning of October, Red Bull Hangar-7 and Collection Rolf Heyne presented the first interactive, non-linear multimedia book application for the iPad: “Ikarus” – Culinary Highflyers. Every year, twelve of the world‘s best cooks are invited by patron Eckart Witzigmann and Executive Chef Roland Trettl to present their cuisine for a month in the Ikarus restaurant.
