From mahogany clams to som-sa lemons: 62 unusual recipes and portraits of their pioneering chefs.

It is a summit of the best cooks of the world. Their meeting place is Ikarus, the restaurant in Hangar-7 located at Salzburg Airport. The famous chefs attending this year's summits are based in the well-publicized favorites of gourmets – and in the wind-tossed, remote greenery of the Faeroe Islands, in San Francisco and its edgy creativity, and in Moscow, so steeped in traditions and modernity.

Each of these three places has taken the inspirations offered by its region and its ingredients to develop a world-leading cuisine. These ingredients include mahogany clams and som-sa lemons, and the recipes featuring them are the equal of anything coming out of the world's best-known restaurants. To recreate these recipes and whenever so necessary, the visiting chef´s ingredients are delivered to Hangar-7. Once arrived, the ingredients are turned by the restaurant's Executive Chef Martin Klein and his team – showing their love of perfection of fine dining – into the dishes envisioned by their creators.

This book presents the year's 62 best dishes. They represent challenges for professional and dedicated hobby cooks. They are a feast for the eyes of all lover of culinary excellence.

Unique concept for a unique restaurant

Ikarus has been hosting for more than 13 years the best that international cuisine has to offer. The restaurant has a unique location in Hangar-7. Each month, Ikarus serves as a platform for one of the world's greatest chefs and their most compelling creations. The results are then offered in high-quality cookbooks. Pantauro is now publishing the third volume in the series “Ikarus invites the world’s best chefs”. The book contains the culinary highlights of 2016, which included the bestowing in spring of a second Michelin star upon the restaurant, and the menu created in July to honor Eckart Witzingmann's 75th birthday. The chef is a focus of the book.
