Guest Chefs at Restaurant Ikarus
Esben Holmboe Bang is co-founder and the head chef of the restaurant Maaemo in Oslo. When translated, the name means “Mother Earth” and reflects Holmboe Bang’s cuisine perfectly. Maaemo brings only 100% organic or even wild-grown ingredients to the table.
Despite all of the emphasis on natural, creativity is never forgotten, as new compositions are always discovered by reducing Norwegian cooking to its roots. It has taken over a year for Holmboe Bang and his partner sommelier Pontus Dahlstrøm to familiarise themselves with regional farmers and their products. The payoff was an unprecedented variety of haute cuisine – and international recognition. Just two years after opening, Maaemo received two Michelin stars.
Each month at Salzburg’s two Michelin-starred Restaurant Ikarus, a different top international chef creates the menu. For this globally unique concept, Hangar-7 executive chef Martin Klein visits the cream of the crop, takes a look behind the scenes of haute cuisine, and is let in on some exciting culinary secrets. “Culinary Heights at Ikarus” offers a unique glimpse into the world of high-end cuisine and provides an interesting portrait of each guest chef, their culinary philosophy, and the food culture of their country.
