Wine is like music to me. I have a great passion for both.
What does a perfect meal in a restaurant look like for you?
There are a few factors that make a perfect meal for me. A cozy atmosphere, honest food and being able to share a good bottle of wine with friends.
What does wine mean to you?
Wine is like music to me. I have a huge passion for both. Others listen to music just for the background. I listen to it for what it triggers in me.
Wine can do the same. Evoke memories, relax, inspire.
What moments make a successful working day for you?
Seeing relaxed and happy guests at the end of the evening, knowing that you have provided perfect service.
But it is also important to have fun.
What is the first memory you have of Hangar-7?
In November 2016, I went to eat at Ikarus for the first time with the staff from my training company. It was an unforgettable experience.
Working here was definitely a goal of mine. It's a great privilege to be a sommelier here years later.
What makes you happy?
Spending time with my friends. Preferably in the sun with good music and a nice bottle of champagne.
What do you need to consider when pairing wine and food?
There are of course a number of factors, such as the acidity structure of the wine or the way the dish is prepared.
Basically, however, it is important to ensure that the wine enhances the flavors of the food and does not mask them.
If you could invite three historical figures to dinner, who would they be?
Dom Pierre Pérignon, Wolfgang Amadeus Mozart, Sir Winston Churchill.
If you had to choose one wine, which one would it be?
It's almost impossible to choose just one wine. But if I had to, I would choose the wines of Domaine Bernard-Bonin from Burgundy.
