Passion, enthusiasm and no small measure of hard graft. He opened his restaurant Quintonil in Mexico City with his wife in 2012. But he does not stash away the gems he finds inside a treasure chest. Instead, they make their way onto his guests' plates – meat, fish, herbs and mushrooms, all grown on this island in the middle of the Baltic Sea. A single mouthful of one of his creations will take you on a journey all the way around the island.
