Guest Chef December 2012: Ramon Freixa
Ramon Freixa is blessed with a real enjoyment of cooking, which is greatly appreciated by his guests. It therefore comes as no surprise that this enjoyment rubs off on his dishes – dishes that reflect the traditional cuisine of his homeland while at the same time reinventing it. The likeable Catalan places special importance on fresh products, and he surprises his guests with exciting ideas.
After his apprenticeship, the skilled pâtissier enjoyed spells at three-star restaurants in Brussels and France. In 2009, Freixa opened Ramon Freixa Madrid, which was awarded two Michelin stars within a very short space of time. Before that, he had worked at his parents’ restaurant since 1994, where he took over the reigns in 1998. Not only did he manage to retain the Michelin star that the family restaurant had recently been awarded, but he also received a string of other honours, including titles such as Best Chef in Spain and Best Restaurant in Spain.
Each month at Salzburg’s two Michelin-starred Restaurant Ikarus, a different top international chef creates the menu.
